Peach Avocado Salsa
- 1cup canned or fresh peaches, diced
- 1 med. avocado, peeled and diced
- 1 tbsp. fresh lime juice
- 2 cups seeded tomato, diced
- 2 tbsp. minced cilantro
- 1 tbsp. white wine vinegar
- 1 clove garlic, minced
- ¼ tsp. salt
Combine all ingredients in a bowl and toss lightly.
Refrigerate at least 30 minutes before serving. Serve
with salted, white corn chips.
